La BIO IDEA pasta is made in Sicily by Fattoria Barbagallo, a family business founded in 1911. The Barbagallos have been making the tastiest Italian pasta from the best durum wheat from Sicily for almost 100 years, using traditional methods. Third-generation Angelo Barbagallo is now in charge of pasta making, where all the wheat is processed from cereal grains to packaged pasta. Barbagallo itself assesses the wheat quality, grinds the flour in 24 steps and dries the formed paste slowly at a low temperature. All this is essential for the final quality of la BIO IDEA pasta. As it slips into the boiling water, a subtle scent fills the kitchen and an exceptional flavor comes from a pasta that is alive and made with passion.
